Organic Coconut Pancakes "The Pancake Party"

My family and I are coconut lovers.  It all started on a visit to Hawaii were we were exposed to many different coconut dishes.  These pancakes were done for dessert one night as a special treat for the kids. They were so excited and surprised we would make pancakes after dinner. They called it The Pancake Party!

Ingredients:
2 cups organic flour
2 tsp baking powder
1 tsp kosher salt
1 tbsp organic white sugar
1 cage free egg
1-2 cups coconut milk (depends on your pancakes thickness preference)
1/2 tsp coconut extract
1/2 tsp vanilla extract
2 tbsp Coconut flakes
Walnuts (for topping)
Organic butter (I like Target's Archer Farm Organic unsalted butter)

Preparation:
In a medium bowl combine flour, baking powder, salt and sugar.  After the ingredients are well combined form a whole in the center of these dry ingredients, to add the liquid ingredients.  Lightly beat the egg and at to the center of the dry ingredients.  Follow by adding the milk and the rest of the liquid ingredients.  Start to combine all ingredients slowly (combining the dry with the liquids).  Just mix until all the ingredients are well spread (do not over do it).  For thick pancakes use 1 cup of milk and add more milk for lighter pancakes.

Cooking:
Set stove top to medium heat.  Prepare a flat pan with the butter.  Pour 2 tbsp of mix for each pancake. When the top side of the pancake has small bubbles its tme to turn the pancake over to the other side and cook. The pancake is done when both sides are golden.

A Change in Me

My daugther has taught me how to be a "night owl". She is sleeping now and so my typing starts every night. In a similar manner the way my daughter is "teaching" me to embrace new things and change behavior my Mother has done this since I was a little girl and still does. My mom was one of the inspirations on my embracing of an organic lifestyle. My Mother is a diabetic and after being diagnosed started a self-education journey. She has read numerous books, magazines and articles to understand and overcome diabetes. It was twelve years ago when she was diagnosed and since then she has shared with me and my siblings all she has learned about living a healthier life. It was only until recently during a vacation that I really made the decision to change to an organic life style. I have changed eating habits, skin products, bathing products, my makeup and even the water in order to live a more true and clean life for my body and my family. Thank You Mom. I was listening!
